I love seafood of all kinds. At Aldi yesterday I bought a package of bay scallops and a package of sea scallops. I’m not sure when I started making this but it’s easy and I love it:
I make a big bowl of coleslaw, with homemade dressing. I had apples today so the slaw consisted of apples, carrots and cabbage. The scallops are seared in butter, a little garlic, Lawry’s salt and pepper are added . . that’s it.
Because searing scallops in butter makes a splattering mess, I love taking the hot plate outside and doing this out there. I wipe the hot plate down with a paper towel before bringing it in, then wipe it with a soapy dish cloth. Cleanup for dinner was easy.
Less than half the package of scallops was used so I may make the same thing again tomorrow, or I may roast a piece of salmon I bought yesterday and add a few roasted scallops and serve all that with the leftover coleslaw.

Growing up in New England we had scallops (and other seafood) all the time. Living in Phoenix, we don’t have many places to get good seafood and my husband won’t eat most of what I love. Your scallops look fantastic and I might just have to find some to make for myself! We have an Aldi that recently opened about 30 minutes away from me–maybe I’ll plan a “road trip” for tomorrow!

Hack tip to get rid of the extra grease, either from butter or bacon grease (yes I like bacon) I put oatmeal in the pan sometimes a bit of water to soak up the oats if I’ve guessed too much. The birds LOVE it. I put it on one of my planters on the deck and am swarmed w all kinds

I don’t mind cleaning the pan – it’s the stove and vent hood I hate cleaning. Since I’m using cast iron, I just wipe it out with a paper towel and don’t usually do anything else with cast iron.
