I had been wanting lentil soup for over a week and had gotten so far as to bring a bag of lentils upstairs. Yesterday I stopped what I was doing and made it.
I used the recipe that’s on the menu plan for next week – Lentil Soup with Spinach but I kinda cleaned out the fridge. I had a bit of smoked roast that I had taken out to add to a baked potato yesterday so I chopped that up really fine. I wanted the flavor but don’t like the texture of meat boiled in soup. Then it was kinda too salty so I added a couple of chopped potatoes, then a couple of chopped carrots. Then I figured it needed a can of tomatoes.
Lentil soup is hearty without being heavy. I should make it more often!
It’s what I’m having again today. That gives me more stitching time.

I have been on a soup kick the last couple of weeks. It’s cold and awful here in northeastern Ohio, so I have made two pots of chicken soup (one small and one big). I loaded both up with vegetables because I’m not crazy about meat and soup, either!

Lentils aren’t on my list anywhere. Neither hubby nor I like them, so I never buy them. I did make chicken noodle soup last week, but after one night, he didn’t want it again, so it’s been in the fridge getting moldy ever since. Disgusting!!

I love lentils. I love how they take on the flavor of anything you put with them, I love how filling they are. They just seem like a hearty meal to me. I hate when food goes to waste and try not to let it happen but it sometimes does. I would have eaten all your chicken noodle soup. Love it!

I’m about to make chicken noodle soup. My husband loves leftovers so much (breakfast?!) that I will have to stake a claim to have any leftovers myself.

Every now and then, my husband refuses to eat the leftovers. I finally stopped making Shells and White Cheddar (box) because it made 5 servings, and I didn’t like having to eat 3 of them myself over the next 5 or 6 days!

My DH makes a lentil soup with spinach. I drizzle a little balsamic vinegar over the top. Yumm.
