Chicken Tacos for Wednesday

I had meant to finish the Honey Sesame Chicken post this morning and got sidetracked so I’m sorry these two posts are back to back.

The chicken tacos, beans and rice were absolutely delicious and better than anything I’ve eaten out . . I was going to say lately but I haven’t eaten out lately.

Nothing on that plate was neon green as it appears in the photo. It’s overcast outside and the breakfast room light seemed extremely bright so I guess that’s what makes the colors look weird.

I cooked enough beans to use in Thursday’s meal so I took some of them out and mashed them for the refried beans and left the others whole for Thursday.

I didn’t follow the recipe for the beans. When I make beans, I don’t season them in the beginning, just put them in the Instant Pot with plenty of water (because I don’t soak them), add a piece of smoked meat – today was storebought smoked turkey neck. When I smoke a brisket, I’ll cut off some of the fatty pieces and freeze them and then just drop a chunk down into my beans to cook.

After 30 minutes of cooking under pressure I add salt and Pinto Bean Seasoning. There was a guy who catered some of the meals when Vince was working and he always had the best pinto beans. He told Vince how he made them so now that’s how I make mine and they are easy and always good.

I had two avocados on my grocery pickup Sunday and they were both hard as rocks. I hesitate to order them because I like to pick them out myself but . . that’s not happening so I did what I had to do. One of them is still hard but one was absolutely perfect today! I’m sure I wouldn’t have picked out a better one if I had done it myself.

    Could we ask for a recipe for chicken tacos and how you make the rice? I am making the honey sesame chicken this week and can’t wait to try it. It looks so easy!

    My mom always cooked her pinto beans with a couple of pieces of bacon. So good!

  • Homebody – I’ll probably use Kathmandu Aran 100 or Cascade Eco Wool.
