Truffle Zest

Deceptive Names

Several years ago I discovered truffle salt and almost totally quit salting food I was cooking so I could use the truffle salt at the table. Vince didn’t like the truffle salt but he was ok with salting food at the table.

The last time I needed to buy truffle salt, I saw this – truffle zest. I ordered it instead of truffle salt and oh, my . . I like it so much better. I put it on just about everything. Vince can’t stand it. He says even smelling it makes him lose his appetite. Sorry, dear husband but . . with Vince being Sicilian, he loves the nastiest of cheeses. When Chad was a kid, there were times when he would leave the table and run to the bathroom when Vince “cut the cheese”. Sometimes even putting it in a container, it still stinks up the fridge. So, for all these years, I’ve held my nose and kept my mouth shut, as much as I’m capable of doing that.

When we sit down to eat and I sprinkle the truffle powder over my food, Vince always makes a comment and my response is always “It’s payback time for all that stinky cheese!”

It’s funny because Chad likes it too and Addie says she’s going to throw up if we use it.

There’s also a HOT version of the truffle zest and I’ve ordered that one.

My eggs this morning with truffle zest. I think I could eat that stuff with a spoon. Seriously, there’s hardly a meal when I don’t sprinkle this on something.

There are two good things about being here by myself – but I will gladly give up both to have Vince back here. 1) – No one complains about the packages arriving. Obviously, I can handle his complaining because it hasn’t stopped me from buying things. 2) – I can eat what I want when I want. Vince likes to eat three meals a day, though he’s on keto and I think he’s doing intermittent fasting now. He wants breakast at 6 a.m. I’m good with breakfast around 10 and dinner around 3 and that’s it. This morning I had breakfast at 11.

Any meal is so much better when I’m eating because I’m hungry and not because the clock (or the husband) says it’s time to eat.

I may just have bacon, eggs and a biscuit for dinner tonight.

O buy truffle oil on Amazon called Earth Treasure as far as I can tell. It’s something I found in Greece and fell in love with. I was so happy to find it on Amazon. I add very little to my plated eggs and some Siracha. Soooo good. I was delighted to find it on Amazon. The supplier is very nice also. I may just have to order that truffle salt.

I think I’ll stick with salt of one kind or another, but eating only when hungry. Yes! Each of us fixes what we want when we want it. Only on major holidays do we eat together, for the most part. I like it that way.

I am with you! My stomach has shrunk and I can’t eat as much as I once did! If it was up to me I would only eat two meals a day. Maybe snack on fruit or something like that.

I would also be a two meal a day person. My DH cannot understand that I cannot eat before 11 am, even if I get up at 6 am. When he finally gets up…anywhere between 7 -9 am, he is ready to eat immediately. I get up between 5 am and 6:30 am. I don’t eat but I have a great cup of coffee. I do not cook b-fast for hime often. I do make a loaf of bluberry bread (keto) for him. I will once in awhile make b-fast for him (think holidays here). He is in charge of his b-fast (even tho I bake it, and his cookies or whatever he wants). Must say, after my heart attack, he also went to the grocery store (never before, learned to use his debit card (while I coached him through the phone) and he cooked. He can cook to survive, but he is not a good cook. Both of our boys are excellent cooks and they always say, thank you Mom for teaching us to cook, to do laundry, dust and vacuum when we had to. They can also both iron and one can mend on a sewing machine. I feel that I did a good Mom job! They are both good with working on cars! Thanks to Dad!

All I can say is that anyone who wants breakfast at 6am around here had better make their own. I am not a morning person. I also can’t eat as soon as I get up, the husband can. I might add that after 50 years of cooking many meals I’m pretty tired of cooking in general.

I think that’s why I try so many new recipes/techniques. It keeps the cooking fun for me. It’s the clean up I don’t like and sadly for me, I’m not much on cleaning as I go. At the end of dinner, I usually have a disaster.
