Pulled Pork Baked Potato

A couple of days ago as I was putting away jars of home canned food, there was a case of pints of pulled pork. We had smoked a couple of pork butts, I shredded the meat with forks, added a bit of a vinegary sauce and canned quite a few pints. It has been so good to serve with sandwiches or on baked potatoes. I couldn’t stop thinking about it so I baked myself a potato and had a pulled pork baked potato.

I only used part of the pint so I think I’ll have this again for lunch tomorrow. It’s nice to know there are still 11 pints in my stash of canned food.

What I’m hoping to come across in the next day or so is the burrito (or was it enchilada) in a jar. That was so good and I’ve been wanting that again. it’s in quart jars so I’ll have to have it several times so none of it goes to waste but I don’t mind that at all.

    i made carnitas the other day to put in tacos. two days later i used it for burritos. yesterday it was rainy and there wasn’t much of it left, so i added some leftover rice, some broth, and creamed corn – with a bit more seasonings- and it was soup! that could be one use for your leftovers.

      Over baked potatoes is always a good option too! Love having those good leftover versatile meats.

  • Lizard Eyes – This look so interesting. Wollmeise – I already have it.
  • Rattlesnake – I need this to remind me that I survived living in the wilds of Texas for 9 years. Pretty sure I have yarn for this.
  • Lumber Jill Cowl – I have the yarn.
  • Heather Hoodie Vest – I’ll use Cascade Eco+ in Valentine.
  • The Weekender – Not sure about yarn for this one.
  • Homebody – I’ll probably use Kathmandu Aran 100 or Cascade Eco Wool.
