We love sourdough waffles. I’ve combined King Arthur’s recipe and the recipe of a friend and wrote about it in this blog post. Tuesday night, I had enough left over sourdough starter that I told Vince I’d make sourdough waffles for breakfast on Wednesday morning. That’s probably how I messed up my bread dough – too much sourdough operations going on in a small kitchen!
Obviously, I’m pretty sloppy with my waffle making but they still taste amazing. The waffles in this picture were the extras after we ate. I always stick them in a zipper bag in the fridge and we’ll have them for several days.
Yesterday I kept thinking about chicken and waffles. I had chicken in the fridge that I had thawed to make a chicken enchilada casserole so I asked Vince what he thought about chicken and waffles. I really, really do not like frying anything but I do make exceptions.
I went out to get buttermilk out of the shop fridge and Vince said “Where are you going?” I told him and he said “I thought you’d use the Aldi chicken breasts that are pre-cooked and heat them in the air fryer!” Well, heck . . why didn’t I think of that?
My chicken was better than any pre-cooked re-heated chicken! That’s half of it so we have leftovers . . which will be pre-cooked re-heated chicken today! 🙂
We usually use maple syrup but our current bottle is really dark. Vince loves it but I don’t like it so I used Johnny Fair on my waffles. I love that on my biscuits. Vince uses sorghum on his biscuits. I don’t mind sorghum but I’d rather Johnny Fair.
Not sure what I’ll do with that leftover chicken today but I’ll come up with something. Maybe chicken fettucine alfredo? Yes . . I found this recipe. This is what’s for dinner today. I have everything I need to make it. I’ll pick some lettuce and carrots for a salad. We have tomatoes. I’ll boil some eggs and add a couple of slices of deli ham. I think we’re out of cucumbers but . . maybe not.
Maybe I can get some knitting done today.

What is the thing with fried chicken and waffles–my taste buds don’t even think those two things go together???

It’s not much different than eating a chicken biscuit with honey on it.

I’ve never eaten chicken with anything sweet on waffles. I’ve never heard of Johnny Fair. But that chicken sitting on a plate surely looks tasty!

Johnny Fair is a part of the Blackburn Syrup brand. So much has changed, as with all businesses, I’m not even sure they’re still part of the Blackburn umbrella but Blackburn is or was headquartered in Jefferson, Texas.
