Yesterday I was making chicken picatta, which is super fast to make. I had planned to make it Thursday evening but slept through the entire afternoon. I had told Vince we’d eat about 4 because we had a huge breakfast and I still wasn’t hungry. I was sitting knitting and Vince said “You know it’s 3:15!” Nope . . I’m knitting and I lose all track of time when I’m knitting.
Lazy and distracted . . that’s me! I had planned to have chicken piccata, pasta, Caprese salad and Focaccia. Dinner was going to be late but . . how late?
I knew I could get the piccata and Caprese salad done quickly. I wasn’t sure about the Focaccia so I did a Google search “Quick Focaccia” and came up with the One Hour Skillet Focaccia recipe. Ahhh . . focaccia and made in a cast iron skillet . . what more could I ask for.

I did get the piccata made and boiled some spinach pasta to serve with it.

The One Hour Skillet Focaccia — nothing short of amazing.

I will make this over and over. For those who are not comfortable making bread, this is a great recipe to try. I can’t remember if the recipe called for rosemary (I’m pretty bad about not reading directions) but I added some chopped fresh rosemary.
Focaccia is one bread I could eat every day!
Today we’re having tomato soup and grilled cheese sandwiches. It’s a cool day and our cool days will soon end so this is a good day for soup.

Going to have to try the focaccia bread. Looks delicious! I am wondering if you will share your chicken piccata recipe. It’s my favorite when we dine out and since we are eating at home so much, I would love to try it. Judy, I love all your recipes! I have learned so much from you about so many subjects.

I’m so glad you liked it. It’s crazy but I get so nervous when people make recipes I recommend, even though it’s someone else’s recipes with a ton of rave reviews. I’m always afraid people will waste a bunch of ingredients and not like it so I’m thrilled that you liked it.

I tried the focaccia bread recipe last night and we loved it! I passed it on to my 16 y/o granddaughter who is cooking for her family while out of school. She has been experimenting with breads recently.

What size skillet did you use? I just read through the recipe, and it just says to make the dough roughly the same size as the skillet, then put it in and make it fit. I’m thinking maybe a 12″ skillet??
