Many, many years ago I became internet friends with Gina. She posted this recipe on her blog in 2007 and after I made it and raved about it, she gave me permission to post it on my blog. Sadly, Gina passed away and I can’t even remember the year. Maybe 2014 or 2015 but a long time ago.
This soup is one of our favorites. The link still works so if you’re interested or think you might be interested, you should probably print the recipe or copy it and save it. I obviously wrote the blog post while living in Missouri . . we enjoyed it on a “cold, snowy night”.

One of my longarm buddies, Gina, posted this soup recipe earlier in the week. I made it yesterday and oh, it is so good! The best part was finishing off that bottle of wine after opening it. Thanks Gina for including that step in the directions! We had a bottle (several, in fact) of the “Two Buck Chuck“, which I like so I opened a bottle of that and had a glass or two. They were small glasses! 🙂 Then Vince got home and . . we now have one less bottle of wine!
We had toasted cheese sandwiches made on homemade bread, fresh from the oven. Good eatin’ on a cold, snowy night!

I’ve made this soup and substituted shrimp for the Italian sausage. I saute the shrimp in garlic and butter til cooked through and add to the finished soup. Both varieties are tasty.

Oh how I miss Gina. She was one of my favorites and have cooked several things she posted. Shesure died too young. I have made this soup and it was delicious. We have had a few bottles of 2 buck Chuck but have not bought it in years as it is not what is was years ago. Holidays, we take some pricey wine to our son’s for dinner, just for family.
Good stuff. Only for Xmas. He is a wine conosuier and has a great wine collection. He learned this from my father who took him and a girlfriend several times to Napa and Sonoma wineries. My dad always wanted to buy and have a winery. He was not a wine snob, and he would make red wine vinegar from wine that was “cheap” and undrinkable. But he had some great wines stored away in our basement in the San Francisco Bay area. He could have made a fortune selling his wonderful wine vinegar!
Todd and Laura enjoy wine every night but are like us buying decent , not expensive wine for a regular dinner. We buy on sale and spend $8-$11 for a pretty decent bottle. The good stuff for holidays is close to $100. That is his Xmas present and we enjoy it together. He can afford the good stuff but we have stuff we buy that is decent for every night drinking and affordable. When we have company for dinner, if they like wine or know anything about it, we spend a bit more. If they don’t know – they get our regular, every night wine!
Vince, we love good Italian wines. Much more than French wines. We have been to Italy about 3 times and really like Italian wines from Tuscany. Trips to that area have been our favorites. France, not many that we really enjoyed.
We enjoy 19 Crimes from Australia, 14 Hands from Washington and many others. T
hese are affordable for a glass every night. But, we love the good stuff to at the holidays! Have even bought wine at Aldi and a few have been ok. But, you can never get them again.

I remember that soup! Looks perfect with a grilled cheese. How nice that every time you make that soup, you think of Gina.
