Yesterday a friend posted a link to a recipe for Green Enchilada Soup. What’s not to like? It’s keto and cooked in the slow cooker.
You know how much I dislike leaving home! How about having to leave home when it’s frigid outside . . to go to the dentist? Yuck! But, I can run by the store and get a can of green enchilada sauce, which I don’t have and this is what’s for dinner on this cold day!
I may make it on top of the stove. It definitely doesn’t have to be done in the slower cooker. I’ll either buy more chicken breasts on sale today or use a jar of the canned chicken I’ve put up.

I was in Aldi and got 15 pounds of chicken for Stacey to make Sweet and Sour Chicken to can! With all the other ingredients, I probably spent close to $40, but we should have 15 quart jars, and I’m okay with that. Just add rice, right? =)
