Wednesday Vince and I went to Aldi . . obviously we did on Wednesday because we also went on Monday, Tuesday, Thursday and Friday! No . . we missed going on Thursday! But the new sale items started on Wednesday.

Wednesday evening I was talking a friend near Nashville and I told her I was waiting for chicken to come on sale. She said “It’s on sale now . . $1.69 per pound!” How did I miss that?

Yesterday we went to town for something Vince needed and I asked to run by Aldi and sure enough . . chicken was $1.69 per pound.

I came home and canned 14 quarts of sweet & sour chicken. This has pineapple, onions, bell peppers with a vinegar/sweet sauce and it’s delicious. I first started making this recipe in 2014 and it’s been a staple around here. There’s also a recipe for just the sweet & sour sauce that I’ve made for years. This is basically the same sauce I use for the chicken but I can it in pints and I’ll often take just the sauce when we’re traveling and will have access to cooking. I can buy chicken, or pork chops or even ribs, cook those and pour the sweet and sour sauce on them.

For this chicken, when it’s time to serve it, I’ll pour the liquid in a pan, thicken it, add the chicken back, heat it all up and it will be ready to eat.

I have more chicken, roasts and pork roasts from last week that I want to can and by then, I will have replenished what we’ve used since last Fall and I’ll be done with the majority of my canning.

    Sounds yummy! If I was more organized I would try some of your ideas. As it is, my kitchen is probably the most cluttered place in the whole house…or maybe 2nd worst. One of these days….:-)

    This looks good, and I love Sweet and Sour Chicken. I wonder if I can get Stacey to can again so soon. LOL
