Earlier this week, we had turkey wraps with basil mayo. I followed the recipe which used sliced turkey and that was so yummy. Today I made that again but I chopped the cooked turkey (leftover from the turkey I cooked last week), stirred it into the mayo and made it more like a turkey salad.
I love basil and next time I’ll put even more basil in the mayo, even though I put more than the recipe called for.
This is a great hot weather meal. It would work with leftover chicken and I could see using leftover grilled steak, slicing it very thin and putting blue cheese dressing over it.
Super quick, light and fairly healthy.
