Last night Vince and I were talking about what we might want for dinner. Since I have little interest in eating, I have even less interest in cooking. One night Vince grilled tuna. The next night, he grilled steak. Then we had leftover tuna. I keep looking at low carb recipes and I’m perfectly happy to have bacon and eggs, and then a salad for dinner but I know we need more and we need variety.
Last night I kept looking at recipes and then I said to Vince . . I want tuna salad with celery sticks. Tuna out of a can! I love tuna salad. I could eat it every day. Tuna, boiled eggs, dill relish, onions, mayo and a bit of mustard. Vince said that sounded good . . along with leftover asparagus soup.
Another almost no cooking day! That means more knitting and spinning time.
Vince was going to take the car and get a battery and get the oil changed but it’s too cold to be out. The car won’t start and he’ll have to charge the battery to get it going so he’s going to wait til it’s a bit warmer . . maybe Wednesday, before he heads to town. At least that’s what he’s saying this morning.

I had to laugh when you said it was too cold to go out after what our weather has been like the last few weeks…below zero or single digits, windchills of -20 or colder, snow about every fourth day. Hopefully after the middle of next week our weather will start warming up.
