Yesterday I picked the first asparagus for the year.
By the end of this week, we’ll be getting twice this much every day. We’re always so excited to pick the first of the asparagus and by the end of the season, I’m walking out to the garden hoping there is nothing to pick.
I think I’m going to try cutting it up and freeze drying some of the extra. It may end up only being good for cream of asparagus soup but we do like that.
For the first few weeks though, we’ll eat it all and love it. After that, we’ll not be so excited to have it every day.

It looks fabulous. Enjoy!!! I miss the freshly picked asparagus that we enjoyed when we lived out in the country many years ago. Picking it was fun too. But I’m impressed with the quality of the asparagus that we find in the grocery store – not quite as good as fresh picked, but close.

My father had an asparagus bed. I’m like you, at first it’s good. Toward the end of the season I was begging him to give it away…and it’s expensive to buy at the grocery store!

I always freeze the extra. Clean, cut up, blanch, cool, drain, freeze. Not quite as good as fresh but still good. Which reminds me—I need to take a bag out of the freezer.

My guy was asking for asparagus this weekend too, it’ll be a while before ours sprouts (but we have a nice, big patch in our garden). I wasn’t spending $3 for it yesterday, he’ll have to wait!

I could have written that though ours are 2 months behind. Ours is all wild. Lots of patches the animals spread from a garden over 30 years ago.

Interesting that your asparagus is coming in season. I have a large decorative asparagus fern plant on my front porch and it has sent out long but real asparagus shoots. Looks just like asparagus you eat, but very slender.

I’d love to have the opportunity to find out whether I could get tired of asparagus, LOL! We just LOVE it. Grilled, roasted, wrapped up in chicken breasts, wrapped up in sushi, on salads, and just as a way to dip up some soft cheese. I’m not sure we’d get tired of asparagus!
