Another great low carb meal.
Chicken salad (from the left over chicken a night or so ago) on a bed of lettuce with a little olive oil and strawberry balsamic, Swiss cheese, Hatch Chile Pepper/Jack cheese, a couple of cherry tomatoes, cucumber and olives.
I love it when I can use the leftovers and have a great meal.

That does look good – is that avocado under the chicken, or am I seeing things? I love avocado – might have said that before. =)
