For years I’ve made a Zuppa Toscana soup. My old recipe has potatoes and wine and it’s so good. When I saw this Instant Pot Low-Carb Zuppa Toscana Soup recipe, I knew that was what’s for dinner.
Vince has become our resident salad expert so he made a great salad.
The only change I made to the recipe was that it called for 6 cups of chicken broth. I had a 32 oz. carton and didn’t want to open a second carton so I used just the 4 cups that were in the one carton.
This is definitely a recipe we’ll make again but there’s enough left over for probably two more meals! Yay!

Oldest son and DDIL brought their version of Zuppa Toscana after our return home from the heart surgery. I haven’t looked at your recipe link yet, but they were leading us toward keto, healthier eating. I’ll check this recipe out for sure! Of course, I check all of your recipe suggestions. BTW, oldest grandson (young/new gardener, chicken owner) who got an Instant Pot (from us) for Christmas has done so much with it. He texts me with each new experience and is quite excited about this addition to their kitchen….more than his parents or the aunts and uncles who have had theirs several years! Boiling/peeling eggs was very exciting to him.
