Potato Salad with Dijon Goat Cheese Dressing

This potato salad was the best I think I’ve ever tried.

I love roasted potatoes in a potato salad. This recipe was very easy to make. Season the potatoes, toss with a little olive oil and roast.

The dressing gets stirred up in a bowl and poured over the warm potatoes. So yummy!

It was kinda funny. In the middle of making the dressing, I realized I had used the last lemon I had in the house. Yesterday we moved all the plants into the greenhouse, which is not terribly far, but not real close to the house. We were also out of apple cider vinegar in the house so I asked Vince if he would run out to the greenhouse and grab a lemon, while I ran over to the shop and got a new bottle of vinegar. We both went out and when I grabbed my vinegar and started back to the house, it began pouring rain. I stood there in the shop for a second but I had food still in the oven so I ran back to the house. Pour Vince . . he was all the way out to the greenhouse. He waited for a few minutes but figured I was waiting for the lemon so he came back. We were both wet . . I was a little wet but he was soaked. It stopped raining about the time he got to the house.

Anyway, if you’re a goat cheese fan, this potato salad is definitely one to try.

We were talking at dinner . .

Vince: This is so much better than anything we’d get at a restaurant!
Me: And I’d have to put on something besides my pajamas.
Vince: And this cost probably 1/4 of what we would pay in a restaurant.
Me: And I’d have to comb my hair!
Vince: I’m glad we can have great food at home and not have to go out in this weather.
Me: And I’m glad I didn’t have to put on makeup.

I don’t think we’re thinking alike on this but both of us were happy to have a good meal at home and, we were able to have ice cream before dinner!

    Yep cooking at home is the best thing !!! Nice to get all dolled up to go out and eat once in a while !

    I enjoy eating out every once in a while and I do get very tired of cooking. BUT I always like my homemade food best. And once again thank you for sharing your info with us.
