Some days I get tired of green salad and coleslaw, which are my go to quick salads. The other day we were having smoked salmon, baked beans and I felt I needed a salad and didn’t want green salad or coleslaw so I made these cucumbers. They’re so easy.
I pour a little apple cider vinegar and water into a jar, add a little sugar, a little salt and pepper, a little dill, slice a peeled cucumber into the jar, shake it all up and stick it in the fridge for an hour or so.
The leftovers are great on sandwiches!

We put thin sliced onions n ours. Give that a try. Let sit couple of days in ref. and it is even better.

The family recipe for cucumber salad – slice the cucumbers and sprinkle some salt and set aside. After about an hour, rinse and drain the cucumbers. This pulls out some of the water from the cuc. Mix with sour cream, chives and salt to taste. The sour cream thins out overnight and it mixes well with romaine lettuce for a day two salad.

We make it with sliced onions too. I’m not especially an onion lover, but I do like them in this salad. These days, I use English cucumbers because they’re “burpless” and I don’t have to be tasting cucumber the rest of the day, LOL!!

And the PA. Dutch recipe that I grew up with. Slice the cucumbers and an onion, Sprinkle with salt, let sit to get some of the water out. Drain. Make the dressing of equal amounts of sugar and milk. Stir , add apple cider vinegar to taste. Mix and eat! Add a little vinegar at a time to get to the taste you want.
