Ever since we made that first batch of French fries in the air fryer, Vince has been wanting a second one. I resisted but you know what made me decide to get a second one? Breakfast! It’s so easy to do bacon or sausage in one and on the weekends, when we have bigger breakfasts, we often have hash browns but since making breakfast potatoes from leftover baked potatoes, I knew I needed a second air fryer.
With already having several different inserts, I went with the same pot I already have – this Philips model.
This morning when we sat down to eat, Vince at these potatoes for the first time and after his first bite, he said “These taste like diner potatoes!” He then went on to tell me that during summers when he was in college, he’d go to New York to work with his brothers in their construction business. On Saturdays they worked half a day but they’d start their day at a diner, The Sugar Shack, and have breakfast. He said their potatoes tasted just like these.
Good memories are a wonderful thing . . and so are yummy potatoes for breakfast! 🙂

I have so far resisted buying one. My resolve is crumbling. I just want to see a good deal or discount on it before I jump. I did buy another Instant Pot on black Friday, for quite a discount. I think I jinxed myself though, because now the one I have had since 2014 has a C6 error, which is a faulty pressure sensor and I have to contact the IP service center. I use it every day, sometimes for every meal. I wanted to second one because they improved a few things and I thought I would bring the old one up to the lake. Rats!

HA!! Another thing the hubs had in common–my DH’s brother and BIL were both in the construction business! Go figure.

I did slice a left over baked potato this morning, tossed it in some olive oil and sprinkled it Mrs. Dash, cooked the slices in the air fryer to have with our eggs and toast. Delicious!

Judy, does the air fryer have some different capabilities than a standard convection oven? I’ve been thinking that a Breville countertop oven would give similar results with larger capacity, but want to know if I’m missing something.

I had two fryers from the beginning. I got the two same models with handle so I can carry them outside to cook in California. (I like to cook outside and I can even in winter time 🙂
I love them from the day I got them. One for meat stuff the other for potatoes or any side dish.
