I’m going to try to keep posting my menu for each week for two reasons. First, it’s easy for me to find it, even if I’m away from the house and (2) it might help some of you who are wanting to do less cooking but eat more at home. Remember, I only do menus for Monday – Friday. That way, if for some reason we don’t eat at home one day, we will eat our missed meal on the weekend. Otherwise, it’s leftovers or light fixings, plus we usually grill one day on the weekend.
Week of August 29, 2016:
Monday:
Roasted Chicken with Lemon and Rosemary
Sweet & Sour Carrots
Hash Brown Casserole
Sliced Tomatoes
Tuesday:
Out – No lunch at home
Wednesday:
Flat Iron Steak
Sweet Potato Casserole
Roasted Brussels Sprouts
Tabbouleh Salad
Thursday:
Mongolian Beef with Broccoli
Twice Baked Potatoes
Salad
Friday:
Corn & black bean salad with leftover flank steak, avocados and flour tortillas
Salsa & Chips
Tuesday, since Vince won’t be home for lunch, I’ll have leftover roasted chicken – maybe chicken salad.

I’ll be making hash brown casserole next week as well; will have some of it for dinner with a grilled ham slice and freeze the rest in portions for future meals. Ummm…good stuff!
