Pressure Cooker Roast Beef

My pressure cookers have had a workout the past few days. My friend who is here . . back in the very early 80’s . . she had a crockpot that she bought at a garage sale and it was missing a lid.  It was one of those old round crockpots and she just stuck a plate on top for the lid. She made the most wonderful roast beef with gravy in that old crockpot. I have no idea how she did it or what she did to make it so good . . maybe it was the plate on top instead of a lid. I did everything she told me to do; I think once I even stuck a plate on top instead of using my lid but mine never turned out like hers did. Almost 40 years later, I never cook a roast that I don’t think of how good Sandy’s roasts always were.

I’m trying to use food out of our freezer. It will be deer season soon and last year, I had to can it all, except for the backstrap and tenderloins. I’d love to have at least enough room this year for some ground meat to freeze so I’m trying to clean out the freezers. I will get some dry ice and take a few things to Chad when I go . . just to give them a start on restocking their freezer.

I rarely buy meat that isn’t on sale. This was a chuck roast that was regular $26.30 and it was on sale for $10.93. I’m not sure there’s anyone who would pay $26 for an almost 5 pound chuck roast but I know I wouldn’t.

All I did was season it with Slap Ya Mama, brown it in the pressure cooker, then pour in a container of beef broth, a little red wine, a packet of Italian salad dressing and a few Hatch chiles. I cooked it in the pressure cooker, on high for an hour and it was fork tender.

We had it with the Mushroom Oatmeal I mentioned earlier, along with brussel sprouts with cranberry/pear balsamic drizzled over them. Delicious!

For years I would not consider an electric pressure cooker and now, I don’t think I could cook without my Instant Pots. Oh, I know I could but I surely don’t ever want to have to do it.

    Love the “s” on Instant Pots ! I also have 2, one for yogurt and rice, and one for most everything else. Gave away a practically new Cuisinart electric pressure cooker – that never worked if over half full. I think I have a roast in my freezer, I may just try it this weekend…thanks Judy !

    I finally got an insta-pot during the Amazon sale. I’ve cooked fresh chicken breasts to good results. I like having the chicken ready to shred, dice or whatever for meals during this summer weather. So, I am now in the search mode for recipes. Keep them coming!

    Now I need to order additional items like a few more sealing rings (savory, yogurt and spare) as well as a yogurt bag for draining. Is there anything else i need…. I guess I need to get more attached to the pot before I order a second one!

    I’m glad I didn’t get a new slow cooker when I donated my 80’s version!
