My very favorite salad . . actually it doesn’t even have to have beets. All it takes to make it my favorite salad is to add a little fried goat cheese.
All the greens came from the garden. The tomatoes came from the greenhouse. The goat cheese . . if only I had a milk goat! 🙂
The greens are a mix of whatever is in the garden . . spinach, purple lettuce, beet greens, chard, kale, spinach . . enjoy those things while we can. They won’t last long with once the heat sets in.
For the goat cheese, I just mash it into little round disks, dip in beaten egg, then in seasoned bread crumbs and fry in hot butter. Yum!
