Oh, how I love my electric pressure cooker. Yes, some of you may remember that for years I said I would not use an electric one. Now, it’s probably the most the most used kitchen appliance I have. I’m still glad I have the stove top models but those electric ones are fantastic. I have the Instant Pot and the Cuisinart. If I could choose only one, it would probably be the Instant Pot but I think I can always have two.
For dinner tonight I had planned to roast a beef tenderloin in the oven and was going to make scalloped potatoes. Then I decided to grill the tenderloin instead and I wasn’t going to run the oven for an hour just for the potatoes so I turned to my favorite source for pressure cooker recipes – Pressure Cooking Today. As always, she didn’t let me down.
The recipe is Cheesy Potatoes Au Gratin and it’s easy, quick and delicious! I have a friend having surgery this week and I’m going to fix dinner for her one night. I was thinking of making mac and cheese but I think, instead, I’ll make these potatoes again.
Potatoes, green beans and grilled tenderloin. Good choice for a great dinner!
