Oh, how I love my electric pressure cooker. Yes, some of you may remember that for years I said I would not use an electric one. Now, it’s probably the most the most used kitchen appliance I have. I’m still glad I have the stove top models but those electric ones are fantastic. I have the Instant Pot and the Cuisinart. If I could choose only one, it would probably be the Instant Pot but I think I can always have two.
For dinner tonight I had planned to roast a beef tenderloin in the oven and was going to make scalloped potatoes. Then I decided to grill the tenderloin instead and I wasn’t going to run the oven for an hour just for the potatoes so I turned to my favorite source for pressure cooker recipes – Pressure Cooking Today. As always, she didn’t let me down.
Cheesy Potatoes Au Gratin
The recipe is Cheesy Potatoes Au Gratin and it’s easy, quick and delicious! I have a friend having surgery this week and I’m going to fix dinner for her one night. I was thinking of making mac and cheese but I think, instead, I’ll make these potatoes again.
Dinner
Potatoes, green beans and grilled tenderloin. Good choice for a great dinner!

Well how did you make them in the skillet in pressure cooker? How did they get to be brown on top? I love pressure cookers wish I had electric one. Think I’ll ask for that for Christmas. They are always saying they can’t find me anything I don’t already have.I feel I need one of these jewels. Thanks bunches fro hints and tips too.

I recently got an Instant Pot after reading about your using one. OMG I love the thing, and now my daughter is learning to use it too despite her fears..
Made meat loaf and potatoes in it last night. Oh my….. haven’t had a fail yet, everything has been well received and will be repeated!

I am really glad I got the electric pressure cooker when you were writing about around Christmas time.
Have made some really good meals in it and this is something else to try that looks really good.
