After canning lots of chicken earlier this week, I had one chicken breast that didn’t fit in the jars and wasn’t enough to fill up another jar. Instead of getting out the FoodSaver and vacuum sealing it for the freezer, I decided to use it for dinner. I knew that I had leftover rice in the fridge and had seen a recipe earlier in the day for Salsa Chicken so I decided to make my version of Salsa Chicken but instead of baking it, I would make it in the pressure cooker.
I love these one pot meals. I asked Vince if he minds the casserole type meals with veggies all mixed into one dish and he said . . it’s pretty much the same as eating it all separately and I said “I love you!”

Judy, I so appreciate your blog. I have never had a pressure cooker and last week ( at age 71) I broke down and bought the electric Cuisinart. I still have not gotten brave enough to use it, but after reading your 2 recipes, I think chicken will be on my grocery list (or I will find it in my freezer) and try it out over the weekend. I am actually excited

A pressure cooker is nowhere in my future (not from lack of wanting one though). The last two recipients you have posted Judy have me searching for a way to either crockpot them or/ and cook them in the oven when it gets cold this winter. Thanks for the chicken ideas.

Adding this to my “gotta try” list! Thanks to you, my daughter gave me the Cuisinart PC for Christmas last year and I’ve had a ball with it. Last night – again thanks to your suggesting this site! – I made this Mongolian Beef with veggie fried rice and it was divine. Better Half liked it so much he ate two ginormous helpings, what I couldn’t eat of mine, and then nearly licked the pot clean. I have two non-electric pressure cookers that I use a lot, but I also find a lot of recipes I’d like to try that are written for the electric cookers (such as this one!) Can you tell me how I might adapt those recipes for a non-electric pressure cooker?
TIA … love reading about your “adventures” and am continually inspired by your knitting projects. I knit, too, but I’m slow. I’m going to take the advice you gave Nicole and try some more difficult patterns one step at a time!

It would be pretty much exactly the same in an electric vs. non-electric pc. Most of my stovetop models have high and low pressure, as well as “in between” so the recipes that call for high pressure on the electric models would be high pressure on the stovetop models. I don’t think you’ll have any trouble once you try it.

I have a slow cooker but have never had a pressure cooker. Sounds like a lovely dinner. 🙂

I made this for dinner tonight and it was delicious. My husband who is a very fussy eater loved it – but the one type of food he loves is Mexican. Your recipe was easy and I will definitely make this again. Thank you for the recipe.

Judy, my DH said to put a star on the Salsa Chicken recipe. I made it this evening and we really enjoyed it. I did change it up a bit. Didn’t have chicken on hand, but did have about 3/4 pound of ground turkey. ALso, I don’t own a PC, so cooked it low and slow on the stovetop –too hot to use the oven. Next time, I will try the chicken, but the turkey was good. And it made enough for another meal, probably with a bit for lunch left from that. Thanks for the recipe.
