Is it wrong to brag on my own cooking? Well .. this is maybe the best pork tenderloin recipe I’ve ever tried. It was quick, and it’s definitely “company worthy”!
I’ve been trying to use the Nesco roaster as much as possible because this summer, I plan to do all my baking/roasting outside on the front porch so I’m practicing on recipes.
Sheri from The Loopy Ewe posted a Balsamic Pork Tenderloin recipe last week. It looked good but I had a couple of ideas to make it all better.
Herb Roasted Pork Tenderloin
1 package of pork tenderloins (2 per pack)
3 T. balsamic vinegar
1/4 cup olive oil
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. herbs de provence
2 sprigs fresh rosemary
2 strips bacon
salt and pepper
Instructions:
Rinse, dry and trim away any fat or tissue from the pork tenderloins.
Pour the olive oil and balsamic into the bottom of a baking dish that will hold both tenderloins.
Roll the tenderloins in the olive oil and balsamic. Sprinkle with garlic powder, onion powder and herbs de provence. Lay a strip of bacon over the seasoned tenderloins. Place the sprigs of rosemary over the tenderloins.
Roast at 450º for about 25 to 30 minutes or until the internal temp reaches 145º.
If you have convection and would like for it to browning the top a bit and crisping the bacon . . go for it.
Slice, serve with the pan juices.

That sounds soooooo good! Wonder if it would work on the pork loin roast I have in the freezer.

Where do you live? That looks so good that I’m going to give it a try. I’ve never cooked a pork tenderloin before and I guess there’s always a first time for everything.

Don’t you just love herbs de provence? It came in a spice set I bought a few years ago, and I’d never heard of it, but now I use it so much, I mix my own. It’s just so good, especially on pork tenderloin.
