It’s been a bit over a week since we accidentally found the crawfish at Kroger and boiled them. I haven’t stopped thinking about the three one pound bags in the freezer . . every day I thought about them. I keep thinking . . if I had 52 one pound bags in the freezer, I could have crawfish etouffee once a week but that’s not going to happen.
Yesterday, the etouffee thoughts got the best of me and I pulled a bag out and made crawfish etouffee for dinner.
Fresh (and still warm) sourdough bread, and a salad that never got its photo taken, and we had a feast!
Then we got to talking . . and wondering how often Kroger gets those live crawfish so we called them. They’ll order a bag or a half bag any time! Any . . time!! How come I’m just figuring this out. We ordered a bag and we can get them on Friday so now . . I’ll be drooling til Friday waiting for another crawfish boil and hopefully another 3 pounds in the freezer for etouffee.
I say this about most everything but I could eat crawfish every day!

That crawfish etouffee certainly looks delish. I”ve only had etouffee once before and it looked more like soup poured over rice. Believe it had shrimp.

There are all different kinds of recipes. Some are more soupy. Mine isn’t soupy — just enough “juice” to get the rice covered and flavored and I never put shrimp in mine. I love shrimp though . . just not in my crawfish etouffee.

Judy, 52 bags of crawfish? Keep ordering a bucket each week and you will achieve it. I’m thinking you sound almost as crazy as I’m getting. I finally grabbed a friend yesterday, pulled him up to my apartment with a grocery cart and asked him to please go “shopping” thru my freezer and pantry. Both were overflowing. When he left we were both happy.

The season is about to end. By the first of June, the shells are thick and the crawfish are hard to find. Next year, if Kroger is still ordering them on an individual basis, I’ll definitely get more. Didn’t know about it in time this year.

You’re very lucky to find live crawfish that far west. I fill my freezer with peeled tails for en etouffee or fetuccine every so often the rest of the year since my husband refuses to boil a sack any more. I think we’ve eaten our last boiled crawfish for this year.
