The last time we were in Llano, we stopped by Miiller’s Meat Market and bought a few stuffed chicken breasts. They are so huge! They’re stuffed with cheese and jalapeno peppers, then wrapped in bacon and each one weighs a little less than 1-1/2 pounds. We split one and still have enough left over to slice and make sandwiches for lunch the next day.
I seasoned the breast, browned it, browned some new potatoes, added a bit more jalapeno peppers and some onions.
I covered it and baked it. I would normally put this in the solar oven but this was one of those rainy days we had last week so it cooked in the inside oven.
A one dish meal — easy to fix, easy to clean up. Can’t beat that.

I love throwing meat, potatoes and veggies into the crockpot and then it is all ready at the end of the day. Works perfectly on days we are running around.

That looks quite yummy. For one-pot meals, I’ll usually go with a hearty soup or toss up a stir-fry. For the soup I may add a salad on the side, and for the stir-fry I’ll add a side of rice to which the rice cooker makes the best rice and I don’t have to do a thing other than load it and push the button.

MMMmmmmm … that looks so good! I make a feta-stuffed chicken breast that’s wrapped in bacon but never thought about putting veggies with it and cooking them all together. DOH! Guess how I’ll be fixin’ ’em next time? 😉

We nicknamed it Drunk Cow but you can use chicken or pork chops or sausages too.
Brown 1/2 pound cubed chuck. Then add 1/4 cup chopped onion, 1/4 cup rice, 1/4 cup red wine, 15 oz can of diced tomatoes and juice (or better yet a jar of your canned tomatoes) and spices (parsley, garlic, thyme, salt and pepper). cook on low heat for about 45 minutes.
Wonder how long it would take in your solar oven, Judy?

I like to fix venison hash brown casserole. EASY venison cube steak, onions, hash brown potatoes, seasoning and a can of cream of chicken soup. Hubby loves it! His eye glaze over when he here’s that is for supper.
