Grilled pork chops, corn on the cob, purple hull peas with okra (peas and okra from the garden).
We set the new grill up on the front porch, which makes it so much easier to use than the old grill which was set up just out in the back on the gravel. Not that it rains much around here but it seems like the days I wanted to grill were the days we had a chance of rain and there’s always a gusty wind blowing here so with the grill on the front porch, it’s shielded on one side from the wind and partially shielded on another side by a clump of trees that blocks the wind.
I responded to some individually who asked about the grill. It’s an inexpensive grill from Sam’s Club. I love that it has a propane lighter and it’s very easy to raise and lower the charcoal closer or farther from the food being grilled. I wish it had a propane burner but it doesn’t. I rarely use it but it would be nice to have if we lose power. We talked about getting a Big Green Egg, and may do it some day but for the next year or so, the new grill will be just fine.

Judy, do you have an Excalibur dehydrator? I forget. I dehydrated both sliced and whole pods of okra and vacuum sealed them in quart jars with my Foodsaver. I used the tiny pods whole and they go into peas. I add them when I start cooking so they have time to rehydrate. It’s just like using fresh okra. I use the dehydrated sliced okra in soups & gumbo’s.
It looks like we’re going to have a bumper crop of okra again this year. Don loves to plant okra!

We’re not going to get it til we know for sure we’re staying here and one drawback is that we’re over 2 hours from the closest dealer so having to stock up on their charcoal may be more than we want to deal with. We’ll think about before buying one.

Judy, I can’t make a good porkchop inside or outside. Any hints on how to cook it to be tender instead of tough?

Marcie, You’re cooking the chops too long. Most people are afraid of pork and cook it to death. My grandmother used to cook a pork chop until it was like shoe leather! LOL! Just cook the chop until it’s not pink anymore. If you have to, cut into one with a knife and fork to watch, that’s how I learned to cook them correctly.
