Don’t ask me why I love this Eggplant Salsa because I really shouldn’t since I don’t like red sauce and I don’t like oregano but I love fennel seeds and I love eggplant and I definitely love this stuff.

In this post, I mentioned my favorite way to use it. I had 5 or 6 eggplants and got 9 pints. There are 5 or 6 eggplants in the garden that are almost ready to cut. By Thursday, I should be able to cut those and make another 9 pints. I would like to have at least 30 pints before my eggplants stop producing. I will make more if I have the eggplants to do it.

You know what I think I’m going to do? I’m going to make meatballs and use this sauce and see what Vince says about it. Maybe I shouldn’t! If he likes this a lot, I may have to make 100 pints of it! I’ll have to call it Eggplant Pasta Sauce if he likes it.
Vince doesn’t like cilantro. This recipe doesn’t call for it but it seems to me like salsa needs cilantro. I just add it on top of my dish when we have it.
The funny thing is going to be if Vince likes it with meatballs over pasta and I don’t! 🙂
