Yesterday I picked a few things out of the garden.

The potatoes in the colander – they were Yukon Gold from Sam’s Club and a couple of them had sprouted. I had three 5 gallon buckets that I had used for growing tomatoes last year so I cut off the sprouts and stuck two of them in each of the three buckets. Those potatoes all came from that. Potatoes are so easy to grow, they’re pretty fast and are done by the time it gets super hot and dry.
I just picked the asparagus around the edge of the the raised bed to keep Oscar from getting them. The vet doesn’t want him eating them because they’re high in oxalates. He will walk up to the edge of the bed and snoop around but walks away if he doesn’t see any so I try to keep those front ones cut pretty closely.
I would have let the eggplants grow a bit larger but something has been nibbling on them.
The potatoes at the bottom are from those plants that come up volunteer every year in one of the raised beds. I’ve dug and dug and almost sifted the soil and tried to get rid of the potatoes but they always come back. The 4 x 8 bed is totally full of potatoes. I like these longer, thinner potatoes for breakfast potatoes. Maybe we’ll have those for breakfast this morning!
Speaking of breakfast, yesterday we had some errands to run in town and I had a “reward” for a free entree at Jimmy’s Egg so we had a late breakfast/early lunch there.

My favorite thing to get there are the quesadillas. I don’t even eat half of those and bring the rest of the home, reheat them in the air fryer and they’re better than they were at the restaurant!
I have lunch made for today so maybe we’ll skip breakfast, have an early lunch and then share the quesadillas for an afternoon snack.
