It seems that every year, when I’m in the middle of canning, freeze drying or dehydrating veggies from the garden or things I buy at the farmers’ markets, there are always things I wish I had canned ahead. This year, I’m determined to can as much as I can ahead so all of my canning effort can go towards the fresh veggies.
Since we eat our main meal around 2 or 3 p.m., we’ll often want a healthy snack in the early evening. We both love hummus and we can eat it with a celery, carrots or toasted pita or crackers. There are all kinds of ways to serve it. Sometimes when I have greens in the garden, we’ll have a wrap using hummus along with chicken salad, tuna salad or ham salad.
The easiest way for us to have hummus when we want it is for me to can it ahead of time. Then all I have to do is drain off the liquid, use the stick blender or small food processor, blend it all up, adding liquid back as needed, and we have almost instant hummus.
I had put beans on to soak last night so this morning I made 12 pints of jalapeno/garlic hummus. Each pint jar will be enough for us both snack on it two different evenings.

Tonight I will put cannellini beans on to soak and I’ll can 12 pint of those tomorrow. Those are our favorite beans so we go through those more than any others. Then the next night, I’ll put more garbanzo beans on to soak and make 12 pints of roasted red pepper hummus.
I will also cook up probably 5 pounds of pinto beans, freeze dry those and they make the best refried beans.
I’m hoping to have ALL of this done by this time next week. We’ll see . .

There are quite a few on the internet. Any that add sesame seeds are NOT approved. If you will search “hummus in a jar”, you will find dozens of sites with the recipes.

While I’m not extremely fond of hummus, I friend bought me a container of chocolate hummus. She eats it with apple slices. I was dubious but of course tried it since she had bought it to me and, to my amazement, it is very good. Never in a million years would have thought I would like it but just added it to my next grocery list.
