Chad, Nicole and Addie came down today and we boiled crawfish. Even with just living an hour from them, I don’t feel like I get to see them enough. Do any parents get to see their adult children enough? Probably not.
There’s a guy, The Bayou Bandit, who goes to Louisiana pretty much every week and brings back a trailer full of seafood, sausage and other Cajun foods. He sets up in parking lots around southwest Missouri for an hour or so mostly on weekends. For us, he’s in Carthage on Saturday mornings from 9 – 10. Vince and I went and picked up a bag of crawfish this morning. We had been planning this for a couple of weeks so I had everything here we needed. Chad had bought some kind of seasoning “booster”, which was something neither of us (Chad or me) had used before.

They were some of the biggest crawfish I had ever seen!

We all worked to get them rinsed and cleaned, then got the crawfish pot going.


With each crawfish we grabbed, one of us would say “Look how BIG this one is!”

I think we surprised ourselves that there wasn’t one single crawfish left when we were done. Chad wants to make a crawfish bisque and I kinda frowned but he said he would help. He took a bunch of the heads and peelings home to boil to make a broth. I ended up with almost a gallon bag of cleaned heads for stuffing.

Not only is Nicole so easy to get along with, but she has the cutest smile. You may notice someone else in the picture NOT smiling because she did not want her picture taken!

I guess Nicole was getting a picture of the table but it’s also a nice picture of my garden area!

What a great day!!
Like you mentioned – there is never enough time with our grown up kids. My daughter and I try to go to dinner once a month, just so we can talk and catch up without any interruptions. I love my grandkids, but is nice to have the one on one time with her.
