I had to laugh at myself yesterday. Vince had posted a video and I think I shared it here where a lab or some calm dog was sleeping and a Jack Russell was running and running and making circles around him. The caption was “Can someone take the batteries out?” That’s how I felt yesterday. I need to learn to slow down! I had so much to get done. It hasn’t been a great week around here. Boots. The fridge – now they’re telling us it will be two more months before it’s fixed. It’s already been two months. It worked 36 months and then doesn’t work for 4 months. Does that sound right? Anyway, I’ve had a hard time getting myself in gear so yesterday was “get it done before the week ends” day.
First, just after daylight I went out and fertilized the plants and trees in the garden that needed fertilizing and watered. Then I did a bit of weed whacking because Vince was going to cut the grass. Then I came in, cleaned up, made breakfast then got started on the kitchen chores.
I was going to make chicken enchiladas for our dinner so I milled some wheat and made dough. I was also making hamburger buns because we’re having sloppy joes one day this week. I milled the flour for the tortillas. Put it in one bowl. Milled the flour for the buns. Put that in another bowl. This is where it went south. I put most of the ingredients for the buns in the bowl with the flour for the tortillas. Thankfully, that was the bowl with way less flour and I figured out what I had done before I messed up the flour for the buns. Sugar does NOT go in the tortilla recipe. I thought . . 1/3 cup of sugar is a lot for this amount of flour but I did it. Tortillas don’t get an egg . . buns do. Tortillas should have had milk. Buns had water . . nope . . tortillas got water.
Once I realized my mistake, I added a bit more flour to the tortillas and kept going. They were sweet! They were not going to work for enchiladas so I opened a jar of apple pie filling and made apple pie tortillas! I didn’t bake them yet. We have no ice cream because . . you know why . . we’ve had to cram everything from the kitchen fridge into the other fridges and there’s no room for a carton of ice cream. So, I stirred up a batch of vanilla ice cream for the Creami. That’s small . . I found a place for it and this evening I will bake the apple pie enchiladas and churn up the ice cream.

I love these little cups of ice cream. This one is just right for us each to have two servings. It’s cream, half and half and milk, with a bit . . maybe more . . of sweetened condensed milk and vanilla.

I’m going to put a butter, flour, sugar crumbly topping on it. I think they’ll be good and this will have been a happy mistake.
Then I made the buns. They were perfect. Glad I didn’t mess those up.

I ended up using two for breakfast sandwiches this morning. I’m taking some to a friend so I may have to make more before we have our sloppy joes! That’s ok. I LOVE making bread.
Then I made the chicken enchiladas and pinto beans. That was good and there are leftovers. Yay! Oh . . I used store bought tortillas. Thank goodness I had those in the fridge or I would have had to make another batch of those.
Today I will spend most of the day stitching with Debbie, should get to see Chad, Nicole and Addie. Yep . . sounds like a good day!

Love how you re-purposed the sweet tortillas. When my grandmother made flour tortillas, she would sometimes take a chunk of the dough and mix in cinnamon and sugar. After cooking them on the comal (griddle), she served them to us with butter. So yummy!

I am sorry – but if it is going to take that long to fix an appliance, they need to just replace the whole dang thing! What if that was your only fridge?????

I am so thankful we have backups and as inconvenient as it is to not have a working fridge in the kitchen or on the main level, I am not complaining. We are very blessed to have the extra fridges.
The appliance store has been great. They told me today they are bringing us a loaner tomorrow.
