I guess I’m not a very forgiving friend! 🙂
The hamburger halves finished up in the freeze dryer Monday night very light. I placed the burgers in the jars, vacuum sealed them and left the freeze dryer to defrost overnight.
Tuesday (yesterday) I filled the four freeze dryer trays. Two with eggs, two with the little hamburger “pucks” I had made in the Super Cube cookie trays (for the dogs when giving them pills). I had to leave the eggs in the freezer until they were frozen solid (in my old freeze dryer, the trays sit at an angle and liquid doesn’t do well). Before I went to bed last night, I put the two trays of eggs and two trays of ground beef in the freeze dryer and started it again. Everything seemed fine til about noon today and I heard the freeze dryer beeping. That was weird . . it can’t be done already. I went to check it and it was a vacuum error. Seriously, I’m not complaining. I use the freeze dryer almost non-stop. We had to replace the pump about 5 years ago and I thought about telling Vince the other day that we should order a backup but since it’s about $400, I knew what he was going to say so I didn’t mention it.
The eggs and ground beef went back into the freezer and they’ll sit there for a couple of weeks, til a new pump arrives. I told Vince this afternoon . . I guess we need to put on our calendar to order a new pump in about December, 2029. He gave me “that look”. I think he was thinking . . surely you will NOT still be freeze drying in 2029. I kinda hope not!

I do want to be alive and kickin’ but part of me still hopes Nicole will want to learn to can and freeze dry and take that job over but, I want her to do what she loves, as I have been able to do and if canning and freeze drying isn’t something she loves, then maybe I’ll still be doing it. Ideally, we would live next door to them and she and I could can and freeze dry together. Of course, if Chad heard we were moving next door, he’d probably move far, far away! 🙂
