Just before noon today I got started with my kitchen chores for today. Sweet potatoes were in the oven, a jar of pinto beans opened and simmering, broccoli in the steamer and steak in the cast iron skillet. That was a super fast lunch because I had a lot to get done. I steam extra broccoli because Chicken, Broccoli and Barley Casserole is on the menu for this week. I’ll fix barley for breakfast one morning, open a jar of canned chicken, stir in grated cheese, chopped broccoli and leftover barley, along with a little cream, heat that up in the oven and dinner will be ready
After we had eaten, I milled hard red, hard white and Einkorn grains, and made bread.
I’ve said this before but when I first started milling the grain to make the flour, the bread wasn’t great. I never knew when a loaf was going to be ok, not great or horrible. Now, I’ve got it down and don’t even have to think about whether it’s going to be good. I’m so glad I stuck with this.
Then I got one of the big 20 pound turkeys in the roasting pan. We’ll have turkey sandwiches, I’ll make some turkey salad for another meal; pull all the turkey off but I won’t can it til I get the broth made so I will have that to use for the liquid in the jar. I’ll put the bones back in the roasting pan, simmer them all night and into tomorrow. Then I’ll can this turkey, get the other one in the roaster and go through the same process with it. If I had room in a freezer, I would have frozen one of these.
We have some easy meals coming up this week . . and they’re all my favorites.
