These days, I would much rather cross stitch than cook. That’s not good because we have to eat, neither of us want to go out to eat, but . . I have a lot of cross stitching to get done and 2025 is going to be a big year of finishes . . that’s my plan.
This morning I decided to make egg bites. I like making them with the sous vide so I mixed up a batch that made 12. Got those cooked. Will freeze some of them and keep out a couple to eat over the next day or so. They’re so easy to make and so easy to reheat and so yummy to eat.
The short jars are for Vince. The taller jars (they actually have the same amount in them) have cilantro and jalapeno peppers added for me. Vince does not like those things.
Next, I opened a quart jar of home canned beef stew for dinner. If you’ve ever canned beef stew, it doesn’t look like yummy beef stew in the jar because I don’t add thickener to the jar before canning. It looks kinda like water with a few chunks of roast beef, carrots and potatoes. I dumped it in the pot and then began to feel a bit “inadequate” so I started adding things. I stirred up a packet of Cajun gravy mix and added that, then I added a bag of mixed veggies, a bit of thyme, onion powder, garlic powder and some Italian seasonings. We had it over barley.
Vince was in the living room and he kept saying “that smells so good!” I thought . . if you only knew!! It actually ended up being delicious and I’ll never look at a jar of canned beef stew the same again. The best news . . I started with one quart. After all the additions and AFTER we both ate, I have almost about 1-1/2 quarts left. I told Vince – we’re going to have this again in a day or so. He said “Good! I love it!” Great! That makes me love it too!
The last thing I made – a sourdough whole wheat (some whole wheat, mostly AP flour) pizza dough. It stays in the fridge overnight, I’ll finish it up tomorrow and we’ll have pizza made in a cast iron skillet for dinner.
Now . . maybe I can stitch the rest of the day and get lots of stitching done the next few days!
