Aren’t y’all glad I’m finding all these new to me recipes?
Today I made The BEST Mac & Cheese recipe and it may well be the BEST mac & cheese. It seems to be the best I’ve made.
I can’t even remember if I told you that our pig isn’t going to be ready until January so that gives me another month to make room in the freezer. What did I spend today doing? Making freezer meals. I’m making several meals to take to a friend who is having surgery next week so I made enough to add some freezer meals for us.
Canning is always my preference over freezing for several reasons. First, it’s shelf stable. I can load up a dozen or so jars of food when we’re going to visit my uncle and take all our meals with us without requiring refrigeration. Second, canned foods are not dependent on electricity. Third, I’m not the least bit concerned about keeping canned food for four or five years where I’m more comfortable using food from the freezer sooner rather than later.
Yesterday, I made another pot of gumbo and froze it all. I made 7 quarts. I’ll send 4 quarts to my friend and her family and I kept 3 quarts here. I also made 14 breakfast burritos and 3 breakfast casseroles. It’s really the same – some of it went into burritos until I ran out of tortillas and didn’t have time to make more so the rest went into a casserole dish with small flour tortillas in the bottom of the dish and between the layers. For those, I simply cut up 4 larger potatoes, baked them in the air fryer for about 15 minutes, then tossed them with olive oil and seasonings and air fried them. I scrambled a dozen eggs, fried up two pounds of breakfast sausage, added a bit of jalapeno peppers and onions and grated cheese. I poured salsa verde in the bottom of the casserole dishes, and over the top of the casseroles. We’ll use red salsa on the burritos when we eat them.
Today I made meatballs, then the Mac & Cheese and I added meatballs to the Mac & Cheese dishes. Tomorrow, I plan to make a couple of chicken dishes, more meatballs so I’ll have and maybe some kind of frozen “pocket” type sandwiches.
