Carter from Grow & Preserve (YouTube) comes up with the best recipes. While some of the recipes she shares are not tested and “approved”, she knows what she’s doing and she is careful about the ingredients she uses and she tests the pH on dishes that need to have the correct acidity for water bath canning. I trust her recipes completely.
Last week she shared her method for making Beef Rogan Josh in this video. I immediately took roasts out of the freezer to defrost and then made her recipe. I followed it pretty much exactly except I had more beef than she did so I basically made 1-1/2 times the sauce.
I canned 11 one and one-half pint jars of this. It seemed like something Vince would love but I wanted to be sure before I canned more. This recipe is definitely easy but it takes a lot of ingredients – a lot to get out and a lot to put away so making large batches instead of individual meals is a real time saver.
Today I opened a jar, heated it up, served it over leftover rice from the gumbo we had Sunday, air fried some butternut squash and this meal, not counting the canning time, from the time I opened the jar until we sat down to eat was about five minutes!
If your family likes Indian cuisine, this is a must try recipe. So delicious and having jars of food that are so good, I have to limit myself from using them all up right away is the best!
Yesterday I was telling Vince that some of these recipes, I’m going to make again and use ground beef instead of roasts. He thought the Rogan Josh tasted a lot like Cincinnati Chili, which he loves and I don’t love so much. I asked him if he would be ok with following the same recipe and adding a bit of unsweetened chocolate after we open the jar. He’s fine with that so that’s on the agenda for the next large canning project.

How can you cut up and air fry a squash in 5 minutes. My air fryer takes 12-14 minutes for squash, plus it takes me at least 5 minutes to cut up the squash. Maybe I’m slow, but my squash is definitely not fully cooked in 5 minutes.

Because I had already seasoned it and baked it earlier in the day and stuck it aside until time to eat. All I had to do to get it ready for the table was toss it in a bit of oil and air fry it for 5 minutes.
