The freeze dryer finished last night about 10:30 so the zucchini took less time than I thought it would.
Remember the little container that held two cups of shredded zucchini and weighed 300 grams? After drying, the zucchini weighed 15 grams. Huge difference. LOTS of water in zucchini.
I ended up with three half gallon jars of shredded zucchini. That’s from four trays that were stuffed. The rest of it filled two trays but they weren’t as full as those first four so I’m thinking I can fill one half gallon jar with the next load. As I mentioned, I had a tray of frozen diced peaches in the freezer and filled the fourth tray with cherry tomato halves for Cooper. Those should be ready Saturday about mid-day I hope.
Next year I think I will slice some of the zucchini into very thin circles, season it with different seasonings and freeze dry it like that. Based on how the shredded zucchini tastes, I think that might have a somewhat of a potato chip taste.

I wonder about just stirring in the dried zucchini shreds in a banana or pumpkin bread recipe like you would walnuts, for the nutritional value. I make zucchini bread and it doesnt seem to add any flavor.

However I use it, I’ll have to add more liquid because it went from weighing 300 grams to 15 grams so that’s a lot of “water”. I may try it in some pumpkin bread since I’ve been wanting to make that anyway. I’ll report back here if I do try it.
