Over the weekend, I had watched this video where she made several chicken dishes. The Hot Honey Chicken Cutlets looked so good! Yesterday I made it and it was super easy! I didn’t have the Frank’s Buffalo Hot Sauce (thought I did!) so I used some homemade hot sauce, which is very similar to Sriracha and a little hot for Vince’s liking so I added less hot sauce and more honey. We’re having leftovers Wednesday and I’m hoping, for Vince, it doesn’t get more hot after it sits for a couple of days.
The other things I changed:
- I did not pound the chicken breasts. I sliced them lengthwise to make two or three “breasts” from one and that worked fine. Gave us more “crust” and more surface area for that yummy sauce.
- I didn’t add any of the extra cayenne to the egg or bread crumbs.
- I had plain bread crumbs and added the Parmesan cheese and some Italian herbs seasoning.
- I only used one egg instead of two. I had two chicken breasts and after cutting them thinner, I had five pieces of meat to dip in the egg and coat and one large egg was plenty.
I served it with coleslaw, Caprese salad (I know – two salads) and great Northern beans (leftovers). I’m so glad there was enough left for us to have this again.
The Creamy Chicken Orzo also looked great. We’re having that this week too!
