I’m a huge fan of Panera Bread. I think I could eat there every day and there are getting to be fewer and fewer places I like to eat. Vince will go to Panera IF there’s a special. Otherwise, he thinks it’s too expensive. Obviously, we don’t eat out much!
My current favorite sandwich at Panera is the Garden Caprese Sandwich. I really could eat that sandwich twice a day. It’s not hard to make at home but it’s more fun to eat it after someone else has made it.
I am also in love with their Fuji Apple Salad. I found this recipe for the dressing and today I made it. I think Panera’s is better but I made this and then we used it in a couple of hours. I’m anxious to try it tomorrow and see if it’s better after marinating for a while. I used avocado oil and I didn’t have any white balsamic so I used Pear Balsamic. I’m going to the olive oil store in Carthage next week to see if maybe they have apple balsamic. If not, I’ll get some kind of white balsamic.

Yesterday when we were at the grocery store, I thought about buying deli type chicken, either from the deli or pre-packaged but with all the recalls, I felt better buying raw chicken breasts. I bought a package of 7 breasts and vacuum sealed them individually but kept one out for today’s salad. I seasoned it with Cajun seasoning and seared it. I used freeze dried apples. I didn’t have Gorgonzola cheese so I used goat cheese and it was good. Sam’s Club has fantastic feta so I think I’ll get some of that. We may need to go there this week.
It was great! Not as good as Panera’s but acceptable. We had pork with apples, served over Einkorn and squash from the garden though everything else kinda got covered up by my salad.
This is the week starting tomorrow but I started today when we eat out of jars. No cooking. No canning (maybe). Baking bread and cookies will be allowed! I hope there will be lots of cross stitching I hope!
