It’s been a busy day but it was the kind of day I live for!
EDIT to add a photo of Roxy, even though it’s a photo of her with them swimming. I didn’t take any pictures when she was here. She’s a sweet little doll!
Addie had a game just a bit south of here today but we had another commitment and couldn’t go to the game so they brought the cute little Corgi puppy over and we kept the grandpuppy. They got here a little after 8 a.m. and left about 9 a.m. so we had a short but good visit with them. Roxy is such a sweet puppy! I’m not sure if she’s so good or if the two that live here are so bad they make any dog look good! Roxy is only a few months old and she doesn’t chew on furniture or shred papers or jump up to get EVERYTHING or bark! I think I’ll have a talk with Cooper and Oscar tomorrow about the possibility of being traded for a Corgi. 🙂
While they were gone, I peeled apples and made apple pie filling. Roxy sat in the kitchen at my feet waiting for something to fall. I did accidentally drop a few tiny pieces and she gobbled them up. I got 15 pints, got them all done and out of the canner before Chad, Nicole and Addie returned. They were all going to go down to a creek and swim with Roxy and they weren’t coming back by here.
BUT, I had started a brisket in the pressure cooker. Last week I watched Louise from The Salted Pepper make this recipe and it looked delicious. I had taken a brisket out of the freezer earlier in the week. I had planned to smoke it til I saw the video. I had mushrooms in the fridge and cranberries in the freezer so I had everything I needed. I got it started – just barely started – when Chad, Nicole and Addie came back to get Roxy after the game. Chad was hanging out in the kitchen and he kept saying “It smells SO good!” I said “Do y’all want to come back and eat dinner here?” YES!
They left to go to a flea market and swimming and left me here cooking. The brisket I had was larger so I had cut it in half and made two 4 pounds pieces. Since I initially thought I was cooking for just the two of us, the extra one was vacuum sealed and I figured I would cook it later in the week. I grabbed it out of the fridgev, stopped the pressure cooker, seasoned the second piece of meat, stuffed it in the pressure cooker and they all loved it. I was able to send them home with leftovers – enough for another meal, and we have the same amount of leftovers.
I cooked Einkorn (instead of rice) to go with that yummy gravy, mac & cheese and steamed broccoli.
The freeze dryer has the second load of peaches and it should be finished by 9 p.m. I think I may take a shower after I get the peaches in jars and vacuum sealed and be in bed early tonight!

Corgis are terrific dogs. A friend once had 3 at one time and they were so well behaved. She now has just one that is a rescue, he does have food aggression issues but since he is an only it doesn’t matter. Perhaps they are well behaved dogs since they are classified as working dogs and not hunting dogs like your doxies, your dog would have a greater prey instinct just like my mini schnauzer. When we were in France at an organic apple orchard a few years ago we saw 2 corgis bringing in a large flock of sheep from two fields over into the barn how they worked together was amazing and they were so well trained.
