I do love the food trucks and Vince does not. I don’t know why. They all seem clean (at least the ones we’ve been around). I think they’re inspected by the health department just like a restaurant. The people working in them are usually the owners and they are always very nice and accommodating. Every month during the summer, when it’s Food Truck Friday, I want to go but I usually only ask about every other time it’s held and considering they’re only open 6 times during the summer, I’m not asking too much, right? We did go in April because that was the first one. We didn’t go in May because it was canceled due to storm damage in Carthage. I doubt we go in July or August because it will be so hot but we’ll see.
There are trucks along two streets, maybe three. I always go for the fish or Ghetto Tacos. Wait . . I didn’t even see Ghetto Taco today. Surely they were there. I was wanting fish but yesterday Vince said he didn’t really want to go so I wasn’t thinking we would go. This morning when I came in from working in the garden, he said “Let’s go to the food trucks. I want fish!” Hmmm . . that’s weird but nice so we went.
It was really good. They fry the fish and fries/chips up when you order so it’s always nice and hot. Their tarter sauce has dill in it and I could drink that stuff. Vince doesn’t like it (opposites attract, right?) so he gives me his. 🙂
Then we went by Walmart and got habanero peppers for a pineapple habanero relish I wanted to make. Came home made 11 half pints of relish, then made a blackberry cobbler.
I also made vanilla ice cream and thought I took a picture of that but guess I didn’t.
I still have to whip up four trays of eggs to get in the freezer so they can go into the freeze dryer tomorrow and we bought cinnamon rolls at the Food Truck in the Park today and I put some of those on a tray in the freezer to freeze and once they’re frozen, I’ll vacuum seal them individually and put them back in the freezer.
Then . . I’m going to stitch for a couple of hours before bed . . I hope.

Would you tell us which recipe/method you use for your cobbler? We have only baked pies with blackberries. I would like to try a cobbler! Also, I will send pictures of your quilt pattern that I’m having problems with as soon as I can get it back up on the design wall! Right now I’m working on a grandson’s graduation quilt as fast as I can.

This recipe for blackberry cobbler. I don’t think it calls for vanilla extract but I do add that.
