I love Mandy in the Makings’ cooking videos and recipes. Yesterday I watched this one – three slow cooker meals. All three of the recipes looked good but I plan to make the first two this week.
Vince bought cube steaks that he planned to grill when he was sure I wouldn’t cook for at least 10 days after the finger incident but I did so those are still in the fridge. This recipe is one Mandy made last year and I had been meaning to make it so that’s what we’re having today. We’ll probably have mashed potatoes and green beans that I canned last year.
Sunday I’m going to make Chicken in Pineapple Bowls on the Blackstone. I’ll also make fried rice.
Monday the plan is to make the Lemon Garlic Butter Chicken Thighs that are in Mandy’s video. I think we’ll have that with rice and steamed broccoli.
Tuesday I plan to fix the Salisbury Steak Meatballs that were also shown in Mandy’s video. Maybe I’ll make mashed potatoes again or serve it over pasta. If I don’t make the pasta, Vince wonders why I bought a pasta machine so maybe I’ll make pasta.
Wednesday through the rest of the week, we’ll probably have leftovers! Yay leftovers! Yay stitching time!!
Yesterday we had leftover lamb chops and tuna. I picked peas out of the garden and we had corn on the cob and Vince had a salad. We didn’t have any mint jelly for the lamb so we had it with rhubarb/strawberry jam and both decided we liked that better than the mint jelly. I do have enough mint now that I can make some apple/mint jelly. I should do that before the garden gets too busy for me.
When we sat down to eat, I thought all the colors on the plate were so pretty!
I cut my corn off the cob. I feel like caveman gnawing on an ear of corn so I’ve cut it off as long as I can remember.
