One of my favorite cooking YouTube channels is Rachel Cooks With Love, though most of the time I call it “Rachel Loves to Cook”. I’ve made so many of her recipes and they are all delicious. I told Vince at dinner . . if I could cook only one ethnic food forever, it would be Mexican. If he had his way, it would be Italian. I do cook some Italian but he loves the red sauces and I do not like them at all. Vince’s best friend, who lives in FL, does a whole lot of their family cooking and I keep telling Vince . . you CAN cook if you want something I don’t like. It isn’t even that I don’t like red sauce . . I don’t know what’s good and what’s not. I don’t know if what I’m making is the best or the worst. If Vince would give me a recipe he knows he likes, I could do it but trying to make something I don’t eat and don’t like . . not fun for me.
Anyway, Wednesday I watched her video for Chicken Enchiladas with Creamy Green Sauce. I do LOVE green sauce (and not the red sauce). Yesterday we were at Walmart so I got what I needed to make this recipe. I used jalapeno peppers instead of serrano peppers. I used whipping cream instead of Mexican crema (simply because I forgot to get it and don’t keep it). Also, I didn’t have Monterrey Jack cheese and didn’t want to buy more cheese since we have plenty and are still down one fridge so I used pepper jack, which I like much more than Monterrey Jack.
Rachel says “This is heavenly delicious” and she is right.
My package of chicken was larger than what she used so I doubled the sauce recipe and now I have two containers, each with 5 enchiladas, in the freezer for future meals.

I can’t wait to make this but I don’t have any potatoes except the ones in jars that I canned so I’ll have to wait til I go to the store again to buy potatoes. Wait . . I bought russets to bake while we were in Louisiana and we never baked them and I think I brought them home. If they’re here, I’m going to make these potatoes tomorrow. I had grilled steak on the menu for this week and it was raining that day so I didn’t cook them. If I find those potatoes, I’ll take steak out for tomorrow. Yum, steak, potatoes and a salad. I have fresh beets so I may roast some of those too. Now I can’t wait til dinner tomorrow! 🙂

I made these tonight and I thought they were delicious! I forgot the peppers so I used part of a green pepper, but still delicious! My first time ever buying tomatillos.
