Yesterday I saw a video of something similar to these and I couldn’t wait to try them. Vince loves breakfast. It isn’t my favorite meal but I try to eat only between 8 a.m. and 2 p.m. so I do need to eat breakfast.
Here’s how I made them:
Ingredients:
Flour tortillas (2) – I used storebought medium size.
3 large eggs – may need a 4th.
1/2 cup milk
grated cheese
jalapeno peppers (or any pepper you like), chopped
1/4 small onion chopped
Ham, or bacon or whatever you want – about 2/3 to 1 cup
1 T. butter
Kale, spinach, asparagus – whatever you want
Salt and Pepper to taste
Grease or spray a 6 cup muffin tin. I used a regular size tin.
Roll up tortillas into a cigar type shape and cut into four pieces. Place these, standing on the cut end in the muffin tin – one per cup.
Saute onion, jalapeno and meat in butter.
Whip eggs with milk. Add salt and pepper. Pour eggs into cups (in the middle and around the tortilla). Only fill the cups about 2/3 full.
Add the meat, pepper, onions. Add green veggies. If using asparagus, you may want to saute it with the onions). Top with cheese.
Bake at 350 for 20 – 25 minutes.
I used more of the pimiento cheese I had made a few days ago. I also placed the muffin tin on a baking sheet because I had filled my cups a bit too much.
We stopped these with salsa and they were delicious!
