It’s so nice knowing most anything we buy in the store can be made at home, especially those things that take few ingredients and are super easy.
One of the best things about sourdough are all the “discard” recipes. Yesterday morning I fed my starter because I was going to start sourdough sandwich bread last night, then I was too tired so I pulled out 30 grams of that, fed it again this morning, and the rest was discard. I had fed it quite a bit because I need 120 grams for the bread so that was a good bit of discard. Again, tonight I’m too tired because we went to Walmart, Aldi, Lowe’s and I worked in the greenhouse repotting some of the tomato starts. Vince changed out some light fixtures in the large pantry and it can be stressful when we work “together”, especially when he’s doing something he isn’t crazy about doing. So, I will feed the starter in the morning and make bread tomorrow evening. I have to . . we’re almost out of bread!
That is weird . . it’s kinda shaped like a heart and I didn’t even try to do that.
I used Alexandra’s Easy Sourdough Discard Crackers recipe to make discard crackers. I used flour that I milled (rye and soft white) so I added a bit of water to get the right consistency for the dough. I used Bagel Everything seasoning. My favorite is always rosemary but I was too tired to go outside and cut a few sprigs. Maybe I was too lazy! Tired sounds better.

I made some sourdough crackers with discard a couple of weeks ago. The recipe uses dough that’s fairly thin and you spread it out by using the back of the mixing spoon. I put sesame seeds on them and they were very good. I was actually surprised…I expected to not like them…? Im looking for more recipes now

That sounds good. I only use whole grain flour that I mill so I have to tweak all the recipes if they aren’t written for fresh milled flour but I do love trying the discard recipes. I’m glad you liked the ones you made. Did your husband like them? Vince is so easy to please when it comes to food. He’ll try most anything and it’s rare that he doesn’t like something.

I have not because we don’t use any purchased flour. Home milled whole wheat takes a lot of kneading to develop enough gluten to make a decent loaf of bread. I need to do some research and see about making peasant bread with whole wheat flour. Thanks for reminding me that I want to do that.

Good for you for changing “lazy” to “tired”. If anybody were to call you lazy, I would like to see their activities! (Or maybe not…it might be tiring to even read.)
