Some days my kitchen does feel like a lab but a big part of what I have been working on happens partly in the kitchen and partly in the basement.
I love having coffee extract but haven’t made any in a good while. I was talking to a friend last night who also loves making extract and she told me she loves using tequila for her coffee and chocolate extracts. Vince said he didn’t think we had any tequila so I figured maybe we could go by Sam’s soon but he found some tequila this morning so I was able to get the coffee and chocolate extracts going. The jar of chocolate extract got put on the shelf before I took a picture.
I also like having orange extract so I started orange and almond extract using vodka. There’s also a jar of cinnamon extract in the above picture.
Last week I canned the leftover turkey and broth.
We had turkey for four meals and I made two turkey pot pies for the freezer. I make the filling and put it in a pyrex dish, freeze it, then when it’s time to bake it, I defrost it, make the biscuits, put them on top and bake it all. It tastes just like fresh made. Those seven quarts of turkey and broth will be used to make soups or I’ll make a roux and add the contents of the jar to have turkey and gravy. I could also use those to make another pot pie. There’s so much I can do with this. I can’t have too much turkey and broth in jars.
Last night I ground hard white wheat, einkorn and rye, got the dough all mixed up, did all the stretch and folds and left it in the fridge overnight; took it out this morning and let it come to room temp and rise and got it baked.
Now, almost 5 p.m., I feel like I can sit and stitch.

I love my cinnamon extract. I’m thinking of doing some lemon and orange also. How fun!!

I found a bag of organic cinnamon sticks that had a “use by” date of sometime in early 2025. I don’t even remember ordering it but was glad to find it.

Most of the fruit extracts I leave brewing for about four weeks.

What do you use the coffee extract in? I don’t think you are a coffee drinker so just curious! Also, how is your weather and gardening?

I like to add the coffee extract to brown gravy (just a tiny bit), and sometimes when I make sugar cookies (not often enough!), I will add icing and for some for Vince, I will add a bit of coffee extract to he icing. Every now and then, I will make an “iced coffee” using honey, coffee extract and milk. I’ve also added a bit of it to marinara sauce.
