This morning, since we’re still out of bread, I made sourdough pancakes. This recipe was a new one for me and it seemed kinda weird. There’s no added flour except what’s in the sourdough starter, which I guess was enough because these were the best pancakes.
Sorry I didn’t take a picture but they were very similar to the pictures on the linked post. They reminded me of the pancakes from my childhood – not sure what it was. They aren’t real “cakey” but they were good and they were easy and I’ll make them again.
This afternoon I wanted something sweet but didn’t want anything too sweet so I made apple bread.
It’s really good and it isn’t terribly sweet and it’s made with soft white wheat so it’s whole grain.
Every time I make it, Vince says “This tastes like it should be a muffin” so I’m thinking it may just work for breakfast tomorrow since I still haven’t made bread.

Yes. I thought about making half because it seemed like it was going to be a lot but it wasn’t. I made them fairly small and ended up with 4 for Vince, 2 for me and 2 left over so for one, half the recipe will probably give you more than you need.

This recipe but I used butter instead of coconut oil and left out the walnuts.
