Last year’s garden produced enough sweet potatoes to hopefully get us through until this year’s crop is ready. We’ve eaten so many sweet potatoes and still have probably four months before the new ones will be ready. But, we’re officially out of purple sweet potatoes and only have a few white sweet potatoes left. The rest are just every day orange sweet potatoes. Vince likes the purple ones the best and I like the white ones the best so I need to play way more of those. I have the slips started but I probably need to buy a couple more purple and a couple more white ones to get more slips.
I saved every single sweet potato I dug up and many of them were long and skinny so yesterday I peeled about six of those, including the last purple one.
I added butter, a bit of sugar, a bit more brown sugar and jalapeno peppers to one end for me. I love having spicy peppers with a bit of sweet. I covered the baking dish and baked them about 45 minutes at 350, removed the foil, did convection for about 15 more minutes and got the tops a little brownish.
They were delicious. I had questioned whether I should save those small potatoes but I’m glad I did. There are still plenty of those but I’m hoping more of them sprout. I love having home grown sweet potatoes.
